Preparation

  1. Marinate the chopped vegetables (peppers and onions) in olive oil, garlic, herbs, sea salt, and black pepper for 30 minutes to 4 hours.
  2. Simmer the sausages for about 10 minutes, then cut them into quarters.
  3. Slice the kolbassa into strips.
  4. Thread a piece of sausage onto the skewer, alternating with a vegetable, a slice of kolbassa, and a wrapped slice of bacon. Use four pieces per skewer.
  5. Cook on the BBQ for about 12 minutes over low heat.

Assembly

In a large serving dish, arrange the skewers on a bed of white wine sauerkraut, sprinkle with fleur de sel and serve.

Notes

  • For a fun appetizer on the patio, use shorter skewers with three pieces of sausage interspersed with stuffed olives for an instant hit!
  • Get creative with your vegetable choices—bell peppers, red onions, zucchini, cherry tomatoes, blanched baby potatoes, mushrooms, and eggplant work wonderfully!
  • Halloumi cheese also makes a fantastic addition to the skewers.
  • Try fruits like pineapple and grapes; they’re absolutely delicious on the BBQ!
