Lime Coriander Shrimp Dumplings

Sauce

  1. In a small bowl, combine all the ingredients for the sauce. Set aside.

Dumplings

  1.  Line the bottom of bamboo steamer baskets and a serving plate with parchment paper to prevent the dumplings from sticking.
  2. In a large bowl, mix all the ingredients for the dumplings, except the round wrappers.
  3. On a work surface, lay out 8 wrappers at a time.
  4. Using a spoon, place about 1 tablespoon of the dumpling filling in the centre of each wrapper.
  5. Fold the wrapper over to form a half-moon shape, pressing the edges together to seal. If the edges don’t stick well, brush them with a little water (see Note).
  6. Set the dumplings aside in the fridge and repeat the process with the remaining filling.
  7. Arrange the dumplings in the bamboo steamer, making sure they don’t touch each other.
  8. Bring water to a boil in a pot to create steam.
  9. Place the bamboo steamer over the boiling water and steam for about 10 minutes. Transfer the cooked dumplings to a baking dish and repeat the process for the remaining dumplings.
  10. Serve with the sauce.

Assembly

Arrange dumplings on a platter and add sauce.

Note

Don’t worry if you struggle to seal the dumplings evenly at first!  This step takes a bit of skill to distribute the filling properly, but you’ll master it quickly. If necessary, use less filling on each wrapper to make things easier.
