Preparation

  1. In the chosen fat, sweat the onion, garlic, kolbassa, and bacon over low heat.
  2. Add your choice of liquid (if the sauerkraut has been marinated in Riesling, do not rinse it; just add enough of your chosen liquid to cover it and prevent sticking to the sides), along with the juniper berries, grated apple, and the ham shank or hock. Cover and simmer for about 1.5 hours.
  3. After the first hour, add the potatoes.
  4. Add the whole kasselers and sausages (either whole or sliced) and let simmer for the remaining 30 minutes.

Assembly

  1. Serve the sauerkraut onto plates.
  2. Top each serving with a sausage, potatoes, and a piece of pork chop.
  3. Enjoy with your choice of beer.
