Which is the best way to cook sausages?
Combination of blanching and grilling (recommended)
We suggest blanching the sausages before grilling them so that they remain tender and juicy. The first step is to bring some water to the boil in a saucepan. Then add your sausages and turn down the heat. Simmer for 5 minutes for smoked sausages and 10 minutes for fresh sausages. Then grill your sausages as you prefer: in a pan, on the barbecue or on a plank.
In the oven
Preheat the oven to 350°F. Arrange the sausages on an ovenproof tray, making sure they do not touch each other. Cook for 20-25 minutes, turning halfway through cooking. Sausages are cooked when their internal temperature reaches 71°C for red meats and 74°C for chicken, turkey and duck.
On the BBQ (indirect heat)
Place sausages on a hot BBQ grill, score and brown the sausages for 2 minutes on each side. Then close one section of the BBQ and place the sausages on that side. Close the BBQ lid and cook for 20 minutes. Sausages are cooked when their internal temperature reaches 71°C for red meats and 74°C for chicken, turkey and duck.
